Peanut Marshmallow Cookies
- 1/2 cup shortening
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1/2 cup peanut butter
- 1 egg, beaten
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup miniature marshmallows
- Preheat oven to 350 degrees.
- Grease cookie sheets.
- Cream shortening, sugars, peanut butter, and beaten egg.
- Combine dry ingredients. Add to creamed mixture.
- Fold in marshmallows.
- Form into balls about 1 inch in diameter.
- Place balls on prepared pans.
- Bake for 8-10 minutes. ENJOY!
